Summer Catch-Up

it has been a busy. busy summer. and i have officially been the worst blogger ever. now, i can't promise its doing to get any better within the next few months, but i'm going to try. working night's now has really thrown me off, my days are spent focusing on school. not too much time left for anything else....but we have managed to do some amazing things this summer. stick with me on a long, picture filled post.

we went out with some amazing friends to pizza bianco, which opera has rated best pizza in the states. it was a two month wait to get in. yes, two months. it was good. two months of a wait...ehhh. but hanging out with friends over delicious pizza and wine was a pretty fun way to spend the evening.

strange word. fancy for dust storm. now most people say they are harmless, but looking at the tree here, they do cause damage. they look really crazy though! we were flying back from san fran during the first one and had to make a pit stop unexpectedly in vegas to refuel until the storm past. go to azcentral.com if you want to see what they look like.

we finally decided it was time to get rid of some of that hair and give her a break from this heat. she seems so much happier after the hair cut. she looks like a puppy again!!!!

we had the pleasure of watching my besties yorkie-poo, lily. they were so cute together. this is the first little dog roxie has ever really spent time with and it was hilarious as they tried to figure out how to play together. we love our new friend lily.

of course, i spent a lot of summer giving my girls some love.

i have discovered frosty paws. they are frozen yogurt and are perfect to keep the pups cool. plus they just get so excited about them!!!

we threw a few date nights in there. this is my all time fav. iPic theatre. hello. you are my new best friend. and the only way i'd like to see movies from here on out. now only if we could afford that wish. it's a high class movie and dinner theatre. you get electric seats, blanket and pillows, gourmet food, and drinks. basically the best way to watch a movie on the big screen. oh and there is a full restaurant and a full club attached, along with wine towers in the lobby. yup wine tower....picture is below.

of course we had an amazing trip to san fran. i will try and do full posts on our trip.

this is what thomas spent most of summer doing. spending time in clinic. i'd say he's the cutest dentist i've ever seen. and yes, i'm the patient in this pic.

Weekly Menu June 5th to June 11th

~A new Beginning~
So, I am still going to post a weekly menu but for two reasons it is a new beginning. Reason one: I am officially on a new diet. I started workout bootcamp and am really motivated to lose those post college pounds that seem to stick around. Now with that being said, no judging if you see butter (gasp) or bread (big gasp) in the menus. I will be tweaking and molding to be a healthier recipe. Reason two: We are officially on a strict budget so we will be using everything thats in the freezer to supplement each weeks groceries. With Thomas in school and me working part time, things are a bit snug in the wallet area. Its kindof an exciting challenge for me to see what all I can buy with our budgeted amount!!! Ok, enough rambling...on to the yummy stuff!!

Delicious! I've made this before and I think its a great budget friendly and waist friendly meal. You can use any leftover veggies you have. Its very easy to adjust!!!!

Can't wait to try this!!!! It looks so amazing!

This looks so delicious and of course I will need to adjust to make it a little healthier. It will def be my splurge meal of the week.

I also did a fauxtisserie chicken this week and have used it to make a healthy chicken salad. This is by far the best tasting chicken yet. I love it by itself or mixed in to a dish!!!

{Last Week Review}
{ONE} The mini whoopie pies are so amazing!!! I LOVE them!!!! If you make these, agave nectar is kept usually near the sugar
{TWO}I haven't gotten around to the sweet potato crisps, but I plan on making those this week
{THREE} Asian Lettuce Wraps are my moms fav from the week. They really are to die for!!!
{FOUR} Vanilla Frozen Yogurt Pops....perfect summer refreshing treat.
{FIVE} Soft baked pretzels were good. I made them with wheat flour and I thought they were still amazing. If you are wanting to mimic a mall pretzel, stick with all purpose flour.
{SIX} Broccoli Apple Salad~ it was ok....I would make it again but it wasn't a new favorite.
{SEVEN} Buttermilk Pancake cupcakes are UNBELIEVABLE!!! I will be making these again...not till after the diet and will have to be a special occasion but man...they were gooood.

My very first veggie





I have decided that as a married woman living in her first house, it was time to grow something!!! So I went crazy....cherry tomatoes, roma tomatoes, squash, banana peppers, and jalepenos! So excited!!!! I started a week ago and I have officially seen my first sign up something...a small green tomato! It was the most exciting thing I had ever seen. I felt all grown up..now we gotta see if the pups will eat them! Keep your fingers crossed!






Today started off a little rough. Had to take little Roxie to the vet to find out she has a respiratory infection....my poor baby!!! But then we got off to celebrating out Military. We celebrated with some great friends and a great cookout....I just came back a bit more lobstery than when I left....But my orange-chocolate cupcakes were a good hit!!!!
